About The Macallan Distil Your World New York Edition Single Malt Scotch Whisky
Over the course of its almost 200-year existence, the Scottish distillery, the Macallan distillers has become a global leader in the production of single malt whiskies. About The Macallan
For more than three centuries, The Macallan the harmony collection rich cacao have called Easter Elchies House, perched on a ridge above the banks of the River Spey, their spiritual home. Alexander Reid founded the first authorized distillery on the estate in 1820, naming it Macallan after an old church that had burned down in the fifteenth century.
Reid had sown barley in the fields surrounding the rented house.
Reid would ferment and distill his extra grains during the sluggish winter days to create whisky, which was either consumed straight from the still or sold to tourists passing through the town.
Currently, the 370 acres that make up the Macallan Estate are 95 percent planted with Minstrel barley (an acre yields around 2.5 tons of barley year, or 1,800 bottles of Macallan the harmony collection amber meadow). To produce a thick, fatty whisky, the distillery also enters into contracts with farmers to buy barley that is high in starch and low in nitrogen.
Following harvest, one of The the Macallan Reflexion two mash tuns is used to malt and mash the barley, a process that can take four to eight hours. The barley is then twice distilled via The Macallan’s copper-pot stills after fermenting with a specially bred yeast. The stills’ copper content minimizes contaminants like sulfur while acting as a catalyst to increase the synthesis of delicious esters.
The oddly tiny stills, which Alexander Tweedie, the production manager, claims are among of “the smallest stills within the Scotch whisky industry,” also yield a whisky that is thick and greasy in taste. After the whisky is distilled, the Macallan a night on earth the journey distillers remove the heads and tails and reserve around 16% of the spirit to age in barrels. This “cut,” one of the highest of any distillery in Scotland, makes for a richer, fuller-bodied whisky.

Tasting Notes
Condense Your World, New York Version The nose of a single malt is sweet and salty, with hints of white chocolate, fresh rain, peanut brittle, and cherry blossom. Notes of baked apple, raisin, chocolate nuts, maple syrup, and pecans abound on the warm, doughy palate. The medium finish has surprisingly subtle notes of sweet oak.
