1792 Reserve Bourbon – 1792 Port Finish Kentucky Straight Bourbon Whiskey
The ingredients for 1792 Port Finish Small Batch Kentucky Straight Bourbon Whiskey are malted barley, rye, and corn. A more nuanced and full-bodied whiskey is produced by the substantial use of rye in the bourbon’s mashbill, even as the inclusion of maize in the recipe contributes traditional notes of buttered bread, biscuits, and roasted nuts.
In Warehouse Z on the distillery’s estate in Bardstown, Kentucky, the bourbon is aged for six years in brand-new American oak casks following distillation. Because Warehouse Z is perched on a bluff, it benefits from the extreme heat and humidity that are perfect for whiskey maturation. “Barracue aging is like real estate — location, location, location,” explains master distiller Ken Pierce of Barton 1792.

In order to ascertain when the bourbon has attained its maximum maturity, Pierce also takes a sample of each cask when it is at rest during the maturing process. “Quality in, quality out,” adds Pierce, who has worked at the distillery for more than 20 years.
1792 Port Finish Small Batch Kentucky Straight Bourbon Whiskey is matured for two more years in casks that were once used to mature port wine after its original six-year maturation. The gentle sweetness of the port casks gives the bourbon notes of strawberry jam, raisins, gingerbread, and cinnamon toast, along with scents of caramel apples, vanilla, and rich chocolate. Hints of cherry pie and sweet licorice highlight the lengthy and intricate finish.
Once the bourbon has matured for a total of eight years, it is brought to proof with water drawn from the Tom Moore spring. The iron-free, Kentucky limestone water — the same water used by Moore over a century ago when crafting his own whiskey — adds a subtle touch of complexity and depth to the bourbon.
