A classic Mexican alcohol made from agave is called tequila. Tequila is technically a kind of mezcal, but it can only be produced from blue agave in and around the Mexican state of Jalisco. The “piñas,“ or agave hearts, are typically crushed by a big Tahona stone after being cooked above ground.
Tequila comes in different varieties: blanco, which is unaged; reposado, which is slightly matured for two months to a year; Añejo, which is matured for two years; and Extra Añejo, which is matured for at least three years.
