Cognacs are usually matured in Limousine or Tronçais wood casks after being double distilled in copper pot stills using Ugni Blanc grapes. Before being bottled, the resulting “eaux-de-vie” are combined.
There are six distinct Cognac crus, or wine-growing regions that are specifically designated to make Cognac. Grande Champagne is the most esteemed cru, with Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires following closely after.
The law classifies cognac into three distinct groups. The age of the youngest Cognac in the blend determines the category of Cognac. The youngest cognac is called V.S.
